Mashed Potatoes to die for (if you eat enough)

A friend of mine made these mash potatoes one weekend at the beach. Everyone fell over themselves going for seconds. This is a very simple recipe that you measure some ingredients to taste such as salt, pepper, etc...

The ingredients are for 10 -12 people

5 pound bag of red potatoes un-peeled.

1 stick of butter

1/2 pint of heavy whipping cream

1 8 oz cream cheese (kraft)

1 8 oz Sour cream

2 cups or more of grated cheese-mild, medium or sharp (your choice)

salt and pepper to taste

First of all boil the potatoes for about 50 minutes on medium high. They are done when they slide off the fork. Do not peel potatoes-skins are great in this dish especially since they are so thin and easy to digest.

Drain water and leave potatoes in the pan you boiled them in (the potatoes will stay hot longer)

Take a fork and break up the potatoes in smaller chunks. Take butter and place in the pan while you are breaking up the potatoes.

Take your electric beater or Kitchen Aid and begin to blend and work the potatoes. You can add the cream cheese in chunks and then add the sour cream after you have blended the cream cheese into the potatoes. You can also begin to add salt and pepper. This is too taste, so you be the judge of what you and your family like.

The potatoes will be thick but well on their way to a creamier state with the sour cream added.

Now begin adding the whipping cream. The recipe calls for 8 oz but you add the cream to your desire of thickness or creaminess.

After you have reached the level of desired creaminess and salt and peppered taste, then take a large glass or corning ware baking dish and begin pouring or spooning the potatoes into the baking dish.

I normally spoon all of the potatoes into the dish then I add the finely grated cheese to the top of the dish. I cover it completely without any potatoes showing. If you are making this dish to eat immediately then put it in the oven for about 20-30 minutes at 300 degrees or until the cheese is completely melted.

If you are making the dish for later in the day or the next day -place the cheese on top of the potatoes and then place in the refrigerator. When you remove the dish, place it in the oven and heat it for 30 minutes to make sure the potatoes are completely hot through and through.

Serve this dish and I promise they will be the hit of the party.
